Arenga palm sugar or populary known as gula Melaka has a sweet smoky caramel taste and special aroma. Gula melaka is collected from the trunk of arenga palm tree. Once the sap from trunk is obtained, it is heated until it becomes concentrated. Finally, it cools down and harden into brick, which will then be crushed into small granules. The color of gula Melaka vary from golden to dark brown, while the texture can be hard, crumbly, or soft depending on the production process.
Gula Melaka contains amino acid, mineral and vitamin and is less sweet than cane sugar. Gula Melaka / Arenga palm sugar, like organic coconut sugar, is low in glycemic index, natural, unrefined and organic.
