Virgin coconut oil (VCO) is obtained naturally from the coconut fresh meat or mature kernel of coconut fruit. Regular coconut oil is made from the sundried coconut meat / sundried coconut kernel called copra.
Regular coconut oil undergoes refine process in which the copra is pressed to extract the oil. Regular coconut oil is odourless, flavourless, slightly salty, and yellow in color. Hence this oil is then refined, decolorized and bleached. As the result, some natural content of the coconut is lost. The regular coconut oil is yellow and being bleached because the copra is contaminated with bacteria before the oil extraction.
In contrast, Virgin coconut oil does not undergo chemical refining like the regular coconut oil, which helps to maintain the natural content, antioxidant and aroma of the oil. Virgin coconut oil is almost colorless, has a slight acidic aroma, salty and sweet tastes, nutty flavor and aroma. Virgin coconut is pure with no additional additive and chemical.
There are two ways to produce virgin coconut oil.
- Wet-milling method. Fresh coconut meat is mechanically pressed to extract the coconut milk content. The coconut milk is then boiled, fermented, refrigerated to extract the virgin coconut oil
- Quick drying of fresh coconut meat to extract the oil mechanically
Virgin coconut oil has numerous benefits:
- Contain good cholesterol and rich in medium fatty acids. The medium fatty acid does not need pancreatic enzymes to be broken down, so it eases the pancreas work. Only very small amount of trans fatty acids is found in virgin coconut oil and hence it is negligible.
- High amount of lauric acid which helps heart to increase good cholestrol
- Help maintaining the health of thyroid and endocrine systems, improve metabolism rate hence reducing weight
- High in antioxidants that help to decrease inflammation
